🥞 Fluffy Pancakes Recipe (Serves 4–6)
✅ Ingredients:
1½ cups (190g) all-purpose flour
3½ teaspoons baking powder
1 tablespoon granulated sugar (optional, adjust to taste)
¼ teaspoon salt
1¼ cups (300ml) milk (whole milk preferred for richness)
1 large egg
3 tablespoons unsalted butter, melted (plus more for greasing the pan)
1 teaspoon vanilla extract (optional, for added flavor)
🍳 Instructions:
1. Mix Dry Ingredients
In a large mixing bowl, whisk together:
Flour
Baking powder
Sugar
Salt
Set aside.
2. Mix Wet Ingredients
In another bowl or large measuring cup, whisk:
Milk
Egg
Melted butter
Vanilla extract (if using)
Make sure butter is slightly cooled before adding, so it doesn’t scramble the egg.
3. Combine
Pour the wet mixture into the dry ingredients. Stir gently until just combined.
Don’t overmix — some lumps are fine! Overmixing will make your pancakes less fluffy.
Let the batter rest for 5–10 minutes if you have time. This helps the baking powder activate.
4. Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat.
Lightly grease with butter or oil.
Pour ¼ cup of batter per pancake onto the skillet.
Cook until bubbles form on the surface and the edges look set (about 2–3 minutes).
Flip and cook the other side for another 1–2 minutes, until golden brown.
Adjust heat as needed to avoid burning.
5. Serve

📝 Tips:
For extra fluffy pancakes, separate the egg and beat the egg white to soft peaks, then fold it into the batter at the end.
If using buttermilk, reduce baking powder to 2 tsp and add ½ tsp baking soda.
Make a big batch and freeze leftovers — reheat in a toaster or oven.
